Today, broccoli cutlets in the oven do look similar to the shape of a ball, but the methods for preparing them are varied. They are fried, baked in the oven, steamed. They make cutlets from both meat and vegetables.

- processed cheese – 50 gr.,

How to cook at home




First of all, wash the cabbage, separate it into inflorescences and boil it for 5 minutes.



Then remove from heat and strain.



For the next stages of preparation we will need a food processor or meat grinder.
Chop the peeled onion in it.





Pass 50 g of processed cheese through a grater.




Next, pass the boiled broccoli through a meat grinder.



Season with spices - salt and pepper. Add egg and breadcrumbs.



Mix all this until a homogeneous mass is obtained.





Cover the baking sheet with parchment, which we grease with sunflower oil.
From the resulting “minced meat” we form cutlets and place them on a baking sheet.



Preheat the oven to 200 degrees, send the prepared cakes there for 15-17 minutes.
We take the dish out of the oven and serve it hot right away! I suggest you cook for lunch.

Ingredients for broccoli cutlets

  • 300 g broccoli;
  • 1 chicken egg;
  • 50 g oat bran;
  • 30 g leek;
  • 10 ml lemon juice;
  • 20 g semolina;
  • vegetable oil for frying, salt.

Method for making broccoli cutlets

Separate frozen or fresh broccoli into florets. Place on a steamer rack or in a colander. Steam for about 10 minutes – the cabbage should become soft.


By the way, you can make cauliflower cutlets using this recipe. Cooking time is the same.


Turn the finished cabbage into puree. Using a blender you can achieve a uniform creamy consistency, but I like it when there are small pieces of cabbage in the cutlets, so I use a regular potato masher.


Add fine table salt to taste to the cooled chopped cabbage and break a large chicken egg. Mix the ingredients.

On fasting days, instead of eggs, add a few tablespoons of regular or soy milk to the minced meat. Milk protein can also hold ingredients together.


Pour oat bran into a bowl and mix immediately. Oat bran has a good property - it absorbs moisture like a sponge, but this takes some time (5-6 minutes).


Shred the light part of the leek stalk into thin strips. Squeeze about a tablespoon of lemon juice. Add the chopped onion and lemon juice to the bowl, mix the minced meat thoroughly. Leeks can be replaced with green onions, but it is better to pre-fry the onions until transparent.


Pour semolina onto a plate. With wet hands, form small round minced meat patties and roll them in semolina on both sides.


Heat refined vegetable oil in a frying pan for frying. Fry the cutlets for 2-3 minutes on each side until golden brown. Then put everything together in a frying pan, turn the heat to low, cover with a lid and cook for another 5 minutes.


Serve broccoli cutlets with sour cream or sauce. The cutlets turn out tender, soft, very tasty and healthy. Bon appetit!

How to cook broccoli cutlets

Divide the broccoli into medium-sized florets and cook in boiling salted water. Add hot water, add ice water and add salt immediately. This way we will maintain the bright color of the cabbage. Cook the broccoli briefly, about 7 minutes.


Chop the broccoli with a sharp knife to make small pieces. This way we get minced vegetables for cutlets.


To the cabbage, add one chicken egg, grated hard cheese, a little garlic (squeezed through a press) and a little breadcrumbs to form and secure the cutlets. Lightly salt and pepper the minced meat. Mix until you obtain a homogeneous consistency and a minced-like appearance.


We make rounded cutlets and place them on a baking sheet, where they can be baked. I use good baking paper, nothing sticks to it, so I don't even use butter. As a last resort, you can lightly grease the pan with olive oil, but I do not recommend frying. After all, broccoli is a healthy food product, which means we will prepare recipes from this cabbage that are as organic and healthy as possible.


We bake the cutlets, put them in a preheated oven so that they immediately set, the cheese begins to melt and thereby hold the cutlets together and they do not fall apart. Bake the cutlets for 20-25 minutes until golden brown. Remove the cutlets and let the cutlets cool slightly.
