Step 1: Preparing the meat for the mix.

Fresh meat must be thoroughly washed and then dried slightly with paper towels. Next, cut off all the films from each piece. We make longitudinal cuts in the pork neck along the entire length, but not all the way. In other words, we cut first on one side and then on the other. No need to cut about 1 centimeter. And the thickness of the pieces themselves should be from 1 to 2 centimeters. Cut the chicken fillet and beef into pieces about 1 centimeter thick. Next, dry spices (cumin and oregano) must be crushed in a mortar, add them to a mixture of wine vinegar and olive oil. Beat the mixture thoroughly, then add salt to taste and ground white pepper. Afterwards, you need to thoroughly grease all the pieces of meat with this mixture. Pork must be coated in each cut. Leave the meat in this form to marinate a little for 10 minutes.

Step 2: Prepare the fillings for the meat mix.


Meanwhile, prepare the fillings for the mix. These are the ingredients that will enrich the taste of a meat dish and make it rich and vibrant. We will have 2 fillings, so prepare deep plates for them in advance. Wash the dill and parsley and chop finely. We divide them into two parts, since greens will be the basis of both fillings.
