Delicious and easy chicken recipes

For this wonderful dish for 1 kg chickens, you will need the following products:

  • potatoes – 500 gr.
  • carrots – 250 gr.
  • tomatoes – 400 gr.
  • cauliflower – 400 gr.
  • ghee or chicken fat - 2 tbsp. l.
  • sour cream 1 cup
  • salt, pepper, parsley

Start by thoroughly washing and quartering the chicken. Place them in a frying pan and lightly fry until golden brown.

Wash the vegetables. Peel the potatoes and carrots and cut them into cubes, cut the tomatoes into rings.

Place the chicken carcasses in a pan, preferably a ceramic one, layering them with vegetables - potatoes, carrots, tomatoes, cabbage stalks and cover with chopped parsley, add salt and pepper.

Pour in melted butter, 2 cups of water, cover with a lid and place in a preheated oven for 1 hour.

When ready, pour sour cream into the pan, add fresh herbs and boil again.

Chicken stuffed with apples

Take a chicken weighing about 2 kg, wash, dry, salt and lightly sprinkle with pepper outside and inside.

Cut 3 apples into slices, season with 2 teaspoons of Provençal herbs and cinnamon, place inside the chicken and fasten the legs with thread

Drizzle the chicken with vegetable oil (about 4 tablespoons)

Place it on a baking sheet and place it in the oven preheated to 210 degrees.

To prepare this dish, first make the marinade.

For the marinade:
  1. take 1 glass of 9% vinegar
  2. 100 gr. white wine
  3. crush 1 head of garlic in a garlic press
  4. mix with a glass of chopped dill and parsley
  5. add 1 teaspoon each salt and sugar
  6. 0.5 teaspoon of ground pepper, the same amount of cumin and a few peas of allspice

Cut the washed chicken carcasses into two halves.

Rub each piece on both sides with a pre-made mixture consisting of grated garlic, vinegar, adding sugar, salt, ground pepper, cumin and chopped dill and parsley.

Place the pieces back down in a ceramic bowl, pour marinade over them, and press down on top with a weight.

Leave to marinate for 5 – 6 hours.

Prepare a deep frying pan, shake off the marinade from the carcasses and arrange the carcasses. Place in the oven to bake.

When ready, coat the chicken with fat and serve, sprinkled with fresh herbs and garnished with tomato slices.

Composition of necessary products for 1 kg of chickens:
  • garlic 3 cloves
  • salt 1 tsp.
  • sugar 2 tsp.
  • 0.5 tsp each cumin and ground black pepper
  • 3 tbsp. l. dill and parsley

Homemade roast chicken

To prepare this dish you need to take per 1 kg of chicken:

  • 0.5 kg potatoes
  • 1 carrot
  • 4 medium-sized onions
  • 1 cup tomato paste
  • canned green peas 0.5 cups
  • 4 cloves garlic
  • 3 tomatoes
  • salt, pepper, oil to taste
  • 2 – 3 bay leaves

Rinse the chicken well, cut it into several large pieces

Rub with salt and pepper, roll in flour

Place in a frying pan, fry in melted butter, add tomato paste.

Cover with a lid and simmer over low heat for 30 minutes.

Lightly fry the diced potatoes, place them in a frying pan with the chicken, adding chopped onions and carrots, green peas, bay leaves

Ingredients for 1 kg of chicken:

Take the cooked chicken and cut off the loin

The remaining pulp must be separated from the bones and finely chopped

Melt butter in a frying pan and fry the chopped meat in it

Fill with sour cream. Place fillet pieces on top, chopped pickled apples on them

Chicken rolls with cheese

What you will need:
  • boneless chicken thighs 8 pcs
  • 1 tbsp. l. vegetable oil
  • salt pepper
For filling:
  • feta cheese 250 gr.
  • garlic 2 cloves
  • half a bunch of dill and parsley
How to cook:

Lightly pound the washed thighs, salt and pepper on both sides.

Start preparing the filling. Cut the cheese into small cubes, mix with finely chopped herbs and garlic crushed in a garlic pot.

Place the filling on the fillet pieces, roll into rolls, securing with toothpicks.

Place on a baking sheet with vegetable oil and place in an oven preheated to 230 degrees for 50 minutes.

Place the finished rolls in a heap on lettuce leaves, previously placed on a dish, and garnish with chopped cherry tomatoes.

Chicken stuffed with rice

Take a whole young chicken (you won’t need to boil it), gut it, rinse well, and salt the outside and inside.

Finely chop the onion and fry with 2 - 3 tablespoons of vegetable oil

Add finely chopped giblets and 0.5 cups of rice

Add a little water and once the rice has puffed up, remove from heat. Salt, pepper, add finely chopped parsley and mint

Stuff the chicken with the mixture, sew it up, place it in a frying pan, adding ½ cup each of fat and water.

Place in the oven, bake until done, periodically pouring fat over the carcass.

Chicken fillet in pineapple sauce

Take 200 g of canned pineapples, finely chop and mix with 1 tbsp. l. curry, 1 tbsp. l. lemon juice. Divide into 2 parts. Add 1 tbsp to one part. l. vegetable oil.

Take 4 chicken breasts and cut them with a sharp knife to create pockets.

Pineapple mixture 1 tbsp. l. Place in pockets and secure with wooden toothpicks; coat the top of the pieces with the rest of the mixture.

Preheat the oven to 180 - 205 degrees, place the breasts on a wire rack, bake for 25 - 30 minutes.

To get a golden brown crust, add the temperature to 260 degrees and hold for another 10 minutes.

Serve with pineapple and curry sauce.

Chicken with coconut sauce

For this dish you will need:
  • ½ chicken or small chicken
  • glass of yogurt
  • 0.5 cups cream
  • ¼ cup dry white wine
  • coconut flakes 2 - 3 tbsp. l.
  • vegetable oil salt, pepper, curry

Pour yoghurt over yogurt, cut into portions, rubbed with salt, pepper, curry, and chicken for 30 - 40 minutes.

After marinating, place the pieces in a frying pan and fry in vegetable oil until golden brown.

Preheat the oven to 180 degrees and cook the dish until done.

Place the wine on the fire and simmer for 3 – 5 minutes. Pour cream into it and add coconut flakes, add salt and curry to taste. Boil by half.

To serve, place the chicken on a plate, pour over the sauce, and garnish with vegetable wedges.

Chicken baked with potatoes

For this delicious dish, prepare:
  • chicken (400 – 600 gr.)
  • 4 – 5 pieces of potatoes
  • 3 – 4 cloves of garlic
  • 1 tbsp. l. chopped dill, parsley, celery, thyme
  • 50 gr. butter
  • 4 – 5 tbsp. l. chopped walnuts
  • ground crackers
  • and as always, salt, black and red pepper to taste

Let's prepare the spicy paste first. Using a sharp knife, finely chop the garlic and grind with salt and pepper.

Combine with soft butter, nuts, herbs, mix everything thoroughly

Season the well-washed chicken with salt and pepper. Take a baking tray, grease it with oil, place the bird on it

Heat the oven to 180 degrees, send our chicken there to roast for 10 - 15 minutes

Cooking procedure:

  1. Start by washing the vegetables well. Dry them.
  2. Peel the onion and garlic and cut into large slices.
  3. Remove the skin from the chicken legs.
  4. Place the meat in a baking dish and arrange the vegetables. It is best to lay out the tomatoes whole.
  5. Pepper, salt, add sugar, spices. Sprinkle with soy sauce.
  6. Add wine, olive oil.
  7. Preheat the oven to 120 degrees. Place the mold in it and leave the dish to bake for an hour.

  1. The whole bird is washed with cold water. Excess moisture from the carcass is removed with paper towels.
  2. The chicken is placed in a wide, deep bowl. Rub it on all sides, first with lemon slices, and then with juice squeezed from half a citrus fruit. The carcass is left for 45 minutes.
  3. All declared spices are combined and ground. Oil is poured onto them and salt is added.
  4. Rub the chicken with the resulting marinade on each side, cover the bowl with film and leave it directly on the table for 3 hours.
  5. The prepared chicken is placed in a mold and covered with foil. The oven temperature is set to 220 degrees.

The whole chicken is baked in the oven for 40 - 45 minutes, after which the covering is removed. The temperature drops to 170 degrees. After another half hour, it returns to its previous level. Soon a beautiful crust will appear on the dish.

French filet

Ingredients: 540 g fillet, 4 tbsp. l. classic mayonnaise and thick sour cream, onion, 220 - 240 g of unsalted cheese, cloves of garlic, fresh dill, salt, sweet paprika and black pepper, ground in a mortar.

  1. The fillet is chopped into thin plastic pieces, each of which is processed with a kitchen hammer and rubbed with salt and spices.
  2. The onion head is cut into thin half rings, after which they are fried in hot fat until transparent.
  3. To make the sauce, combine salted sour cream, grated cheese (60 g), mayonnaise and crushed garlic. Chopped fresh dill is added to the mixture.
  4. The prepared form is oiled. Pieces of chicken (most of them) are placed at the bottom. Half the sauce is spread on top and the onions are laid out.
  5. Next are the remaining pieces of fillet and the rest of the sauce.
  6. The casserole is sprinkled with the rest of the grated cheese.

The dish is baked at high temperature for 25 - 30 minutes.

Julienne with mushrooms

Ingredients: onion, salt, dry mixture of Provençal herbs, chicken fillet, 330 g defrosted champignons, 3 pinches of flour, a glass of cream, 2 tbsp. l. butter, 220 g salted cheese.

  1. The fat is heated in the frying pan. Miniature pieces of onion are fried on it. As soon as the vegetable becomes transparent, add mushroom slices and fillet slices to it.
  2. The products are fried for another 4 - 7 minutes. Add spices, salt and flour.
  3. After a couple of minutes the cream is poured in. After boiling, the mixture remains on low heat until thickened.
  4. The resulting mixture fills special julienne molds approximately ¾ full.
  5. The remaining space is filled with grated cheese.

The julienne is baked in the oven for 17 - 25 minutes. During this time, the cheese should brown.

How to cook grilled chicken in the oven?

Ingredients: carcass (weighing about 2 kg), a large spoon of salt, a pinch of sweet paprika and black pepper, 3 large spoons of olive mayonnaise, 1 large spoon of mustard, vegetable oil.

  1. The prepared bird is rubbed on each side with salt and spices (except paprika). It also needs to be processed inside.
  2. In another bowl, mix olive mayonnaise and mustard. The chicken is covered with a spicy mixture on top.
  3. The chicken is placed on the grill. A large form with water is installed below.

The carcass is baked for about an hour, after which it is rubbed with a mixture of 2 tbsp. l. oil and paprika and cook for another 10 minutes until cooked. This will allow you to prepare a dish with a golden brown crust.

Breast baked with pineapples

Ingredients: large breast, 4 “washers” of fresh or canned pineapple, 60 g of hard cheese, 5 tbsp. l. unsweetened thick yogurt, butter, curry, sea salt, paprika.

  1. The breast is cut into 4 thin slices. They are beaten, rubbed with salt, curry and paprika.
  2. Pieces of poultry are placed in an oiled form. Fruit rings are distributed on top. Add salted yogurt. You can use classic mayonnaise instead.
  3. Grated cheese is scattered on top.

The breast is baked in this form for half an hour. Medium temperature will be enough

Potato casserole with poultry

Ingredients: half a kilo of potatoes and meat, 2 onions, 230 g of cheese, 4 cloves of garlic, 1.5 tbsp. medium fat sour cream, 3 tbsp. l. classic mayonnaise, rock salt, spices.

  1. The fillet is cut very thinly, greased with a marinade of mayonnaise, garlic, salt and spices.
  2. The chicken is infused for about a quarter of an hour.
  3. Thin potato slices are laid out in the prepared pan. Onion rings are distributed on them.
  4. Next comes salted sour cream with spices and chicken.
  5. All the grated cheese is poured on top.

The casserole is prepared for about an hour at 180 - 190 degrees. The readiness of the dish is checked with a toothpick or a sharp knife.

Classic chicken tabaka

Ingredients: chicken carcass, 6 tbsp. l. refined oil, 1 tsp. suneli hops, spicy adjika and dried coriander, salt, 2 cloves of garlic.

  1. The prepared bird carcass should be spread along the back with the skin facing up.
  2. All spices are ground. Add crushed garlic and coarse salt to them.
  3. The resulting mass is lubricated on each side of the carcass.
  4. First, the chicken is fried until browned in a frying pan, then transferred to a mold and sent to a preheated oven.

The bird must be pressed down with a heavy lid. It will take about a quarter of an hour to prepare.

Baking with vegetables in pots

Ingredients: 1 pc. onions, the same amount of potatoes, zucchini, eggplant and carrots, 1 kg of chicken breast, a glass of grated cheese, 4 - 6 cloves of garlic, a pinch of salt and pepper.
