Fried ice cream. An unusual phrase, isn't it? After all, what is so special about ice cream? The fact is that it is cold. How can it stay cold if you fry it? And how can anything remain of it at all, it will simply melt away.

These are approximately the thoughts that flashed through my head a few months ago, when I ordered fried ice cream in a cafe. The first thing I would like to say is that this ice cream takes quite a long time to prepare. But in my opinion it's worth it.

To my question: “How is it prepared?”, they answered me succinctly, “It’s a secret.” But, of course, this answer did not suit me and I started looking. And so…

Let's start with history.

It is not known for certain where, and most importantly, who came up with such an unusual dish. The most common version about the origin of fried ice cream says that its homeland is France. But in documentary sources, information about this type of ice cream first appeared in the United States. During one of the dinners at the White House, someone present noted that he really liked the ice cream in the form of small balls fried in a crispy dough. Thomas Jefferson was the president of the United States at the time. As you know, in 1789, Jefferson returned from France, where he worked as an ambassador, with ice cream recipes and the necessary equipment.

It doesn't melt. How?!

And everything is very simple. The fact is that ice cream, before being fried, is frozen at an extremely low temperature. And, besides, the ice cream balls are rolled in flakes, so the ice cream itself is protected. To make the flakes stick better, use egg yolk, which is used to coat the ice cream beforehand. For taste, green tea (dry), coconut or vanilla is most often added.

You can make fried ice cream at home. However, it is absolutely not necessary to fry it. Fried ice cream prepared in this way is called “fake”, but this does not make it any less tasty.

And here are the recipes.

"Real" fried ice cream:

It is advisable to prepare the ice cream scoops that you are going to fry the day before so that they have time to freeze properly. They should be as hard as possible, because the whole result depends on this.

Take your favorite ice cream and start making balls (to do this, use a special spatula, and your hands, of course). Then put the resulting balls in an airtight container (not glass, of course) so that the balls do not touch each other and put them in the freezer overnight.

Prepare the dough 4 hours before cooking.

For the dough you will need (for 6 balls):

1 cup flour;
1 tbsp. Sahara;
1 tsp salt;
1 tsp vegetable or olive oil;
1 tsp vanillin;
1/2 s. milk;
1/4 s. water;
2 egg yolks (don’t rush to throw away the whites, they will come in handy later).

Stir the dough until smooth and refrigerate.

Heat the oil in a deep frying pan (or kettle) to 190? C. Beat 2 egg whites into the dough. The dough should be thick enough to wrap the ice cream scoops well.

Now take the ice cream out of the freezer and start wrapping, making sure that the balls are completely wrapped in the dough, then they will be protected and will not melt. Place a few balls in hot oil. You need to fry them for about 1 minute (until golden brown).

Then place them on a paper towel and cook the rest. Before serving, place the balls on plates, using whipped cream or cream as a kind of “bedding” for the balls. You can use whatever you want for decoration.

So-called “fake” fried ice cream is prepared in much the same way. The balls should freeze well. They are then rolled in crushed corn flakes until the flakes cover the entire ball. You can add a few spoons of syrup or honey to the flakes to help the flakes stick to the ice cream.

1. Sort the raisins, removing debris, soak for 10 minutes in cool water, and rinse thoroughly.
2. Crumble or grind corn flakes using a blender.
3. Place a block of melted ice cream on a board and cut into 10 equal parts.
4. Grate the chocolate on a fine grater.
5. Crumble each part, mix with raisins and chocolate, form into a ball.
6. Roll each ball in corn crumbs and place on a plate.
7. Place the balls in the freezer.
8. Heat a frying pan, pour in 100 milliliters of vegetable oil, fry for half a minute over medium heat without a lid.
9. Chop or grind walnuts using a blender.
10. When serving fried ice cream, pour syrup over the balls and sprinkle with chopped walnuts. Additionally, you can decorate the ice cream by pouring melted chocolate over it and the plate.

  • ground cinnamon - 1 tablespoon;
  • milk - 1 tablespoon (milk fat content 3.5%);
  • vegetable oil for frying.

Form ice cream into balls and place them on a parchment-lined baking sheet. Place in the freezer for 2-3 hours.

Place corn flakes in a bowl and crush them with a masher. You can use a simple method: put the cereal in a thick plastic bag and go over it several times with a rolling pin or glass bottle.

Mix crushed cereal and cinnamon. Roll the ice cream scoops into this mixture and return them to the freezer for another hour.

Whisk milk, eggs and sugar in a bowl. Remove the ice cream from the freezer, dip each scoop into the mixture and roll in the cereal again. Place in the refrigerator for another couple of hours.
