Cod prepared in this way is especially tender and juicy. Creamy sour cream sauce in combination with shrimp harmonizes very well with the taste of fish, making the dish more interesting and refined in taste.

Ingredients

  • cod fillet – 800 g
  • peeled shrimp – 150 g
  • onions – 1 pc.
  • sour cream – 50 g
  • mustard – 0.5 tbsp. l.
  • cream – 200 ml
  • milk – 300 ml
  • lemon juice – 30 ml
  • butter – 50 g
  • wheat flour – 2 tbsp. l.
  • salt, pepper - to taste
  • dill – 3-4 sprigs

How to cook

  1. Rub the thawed fillet with salt and pepper on all sides, cut into large portions. Place them in a bowl and add 1 teaspoon of lemon juice and leave to marinate for 30 minutes.
  2. Peel the onion, chop finely with a knife and sauté in butter in a frying pan.
  3. As soon as the onion becomes soft, add flour to it, fry it lightly so that there are no lumps. Then gradually add milk in a thin stream, stirring continuously with a whisk. The result should be a fairly liquid sauce.
  4. Add sour cream, cream and ready-made, not too spicy mustard, stir and simmer everything together over low heat for a couple of minutes, stirring. At the end, add shrimp (if large, chop with a knife), boil for 1-2 minutes, adjust the amount of salt to taste and remove from heat.
  5. Place the cod fillet in a heat-resistant form and pour the resulting sour cream sauce with shrimp. Sprinkle with chopped dill. Bake for 25 minutes in a preheated oven at 200 degrees.

Cod baked in the oven in tomato sauce

Tomato sauce goes well with cod. The fish is prepared in two stages: first, the pieces are fried in a frying pan and then baked in the oven. Very tasty not only hot, but also cold.

Ingredients

  • cod – 2 pcs. (700 g)
  • tomatoes in their own juice – 400 g
  • onions – 2 pcs.
  • carrots – 1 pc.
  • lemon juice – 11-2 tsp.
  • salt and pepper - to taste
  • sugar – 1 tsp.
  • bay leaf – 1 pc.
  • wheat flour – 2-3 tbsp. l.
  • vegetable oil – 3-4 tbsp. l.
  • dried basil and dill - 0.5 tsp each.

How to cook

  1. Cut the cod into large pieces, sprinkle with lemon juice, salt and pepper. Then bread in flour and fry in vegetable oil in a frying pan until golden brown.
  2. In a saucepan, sauté diced onion and grated carrots.
  3. As soon as the vegetables become soft, add mashed tomatoes (without skin), salt and sugar, bay leaf, basil and dill. Simmer uncovered, stirring, until thickened. If the consistency of the sauce is too thick, add a little water.
  4. Place the pieces of fried fish in a heat-resistant dish and pour the resulting tomato sauce over it. Cover with foil on top and place in the oven preheated to 180 degrees for 20 minutes.
  5. After cooking, let sit for 10 minutes so that the sauce is better absorbed into the fish. Serve the cod immediately or wait until it cools completely.

Dietary cod, baked in the oven

Your favorite fish can be prepared in a dietary version, without the use of fats, flour and heavy sauces. Cod is baked with vegetables, with onions, tomatoes and peppers placed on the bottom, under each piece, so that it does not stick to the foil. The dish can be served as a light dinner, which can be prepared in just 20 minutes, without any extra labor.

  • cod fillet – 800 g
  • large fresh tomatoes – 2 pcs.
  • bell pepper – 1 pc.
  • onions – 2 pcs.
  • fish seasoning – 3 tsp.
  • lemon juice – 1 tsp.

How to cook

  1. Cut the fish fillet into portions, making 4 servings in total. Sprinkle each steak with your favorite fish spices.
  2. Prepare the vegetables, cut the onion into rings, the pepper into strips, and the tomatoes into circles.
  3. Cut 4 sheets of foil. Place a little onion on each one, peppers and tomatoes on top. Place the spiced cod on a bed of vegetables. Sprinkle with lemon juice.
  4. Wrap each portion in foil and bake for about 25-30 minutes in an oven preheated to 200 degrees. Before serving, sprinkle with chopped herbs.
  1. When defrosting fish, immerse the carcass in cold, slightly salted water, then it will melt faster, be slightly salted, and the specific smell will go away. If you use steaks or frozen fillets, thaw them not in water, but at room temperature in the fresh air.
  2. Small fish can be cooked whole; larger fish are better cut into steaks or filleted.
  3. It is recommended to marinate the cod before baking. Use white wine, lemon juice, apple or wine vinegar, pepper and herbs. You can try marinating in cucumber brine, it neutralizes the smell of fish well.
  4. For a more delicate taste, the cod can be kept for half an hour before baking in low-fat sour cream or natural yoghurt mixed with garlic and herbs.
  5. Spices that go well with cod include black and white pepper, garlic, and Italian herbs. But you should only add rosemary or thyme if you really love their rich aroma, as they will significantly change the taste of the fish.
  6. If you want to get a golden brown crust, then at the very end of cooking, open the foil and finish baking the dish at high temperature. At the same time, try not to dry out the fish!
  7. You can serve cod as a side dish with rice or potatoes, grilled or stewed vegetables. Suitable sauces include wine, tartar or lemon.
