I would like to offer a recipe for cutlets, which my son loves very much because they turn out tender, dietary and very tasty.

1. Prepare bechamel sauce. This is one of my favorite sauces, as it is easy and simple to prepare, and will make any dish tender and juicy.

3. When the flour becomes a little golden in color, add some milk, stirring constantly. You need to make sure that there are no lumps left. then pour in the rest of the milk, bring the sauce to a boil (stirring constantly), add salt and dry dill and boil for 3-4 minutes. Don't forget to stir constantly.


4. Let's make minced meat. Chop the chicken into large pieces for a meat grinder.


5. Peel the onions and carrots and cut them into large pieces.


6. Grind the onions, carrots and meat in a meat grinder.


7. Crumble stale white bread (you need to rub one piece against another - you get small fluffy crumbs) and add to the minced meat.


8. Add egg and salt to taste.


9. Mix everything thoroughly until a homogeneous mass is obtained.


10. Form the cutlets and place them in a well-heated frying pan with vegetable oil.


11. The chicken fries very quickly, after 3-4 minutes we turn the cutlets over and fry a little more on the other side over high heat for 3 minutes.


12. Pour the sauce over the cutlets, cover with a lid and simmer for 5-7 minutes.

Ingredients:

  • Mustard - 1 tablespoon.
  • Kefir - 3 tablespoons.
  • Chicken (pulp) - 300 grams.
  • Onion - turnip 1 head.
  • Non-deodorized vegetable oil - 80 milliliters.

  • Fine salt - ½ teaspoon.

In our cutlets, the chicken breast is chopped into pieces with a knife, and not with a meat grinder. And thanks to yogurt (or sour cream), the meat turns out to be very tender and juicy. You will be surprised how delicious chicken cutlets can be.

Cooking cutlets is also frankly a joy - they are made in a few minutes. Just prepare a large, sharp knife in advance. It makes the cutting process even easier. Children really like these cutlets, and chicken meat is good for them! And, of course, for girls who watch their weight. What about men? And men like everything made from meat! Especially if you prepare some other sauce or gravy for the cutlets especially for them. So fry cutlets for the whole family!

  • chicken breast - 300
  • chicken egg - 1 piece
  • thick unsweetened yogurt without additives (or sour cream) - 2 tablespoons
  • ground black pepper - to taste

Let's prepare the chicken fillet. If you have it ready, there will be no hassle. Just defrost (if you bought frozen), wash in cold water. Then we dry it, let the water drain by itself, placing the meat on a towel, or dip it in a dry cloth that does not leave lint.

If you need to cook the fillet yourself from a whole chicken, there is also no problem. Take the chicken (it’s better to leave it slightly frozen) and use a large sharp knife to cut off part of the breast on one side, and then on the other. If you pick up a bone or cartilage, cut it out. Remove the skin. That's all! Now chop the meat finely with a sharp knife. Working with breasts is a pleasure. It is easy to cut and does not jump out of your hands.

Place the meat in a deep bowl. The bulk of the work is done. Only little things remain.

Now measure two tablespoons of sour cream or yogurt into the meat. Let us emphasize once again that yogurt (if you use it and not sour cream) should be thick, the kind that is eaten with a spoon, not drunk.

Salt the minced meat, sprinkle with ground black pepper or other seasonings to your taste.

Stir thoroughly.

We wash the egg and break it with a knife into a bowl with meat. Make sure you don't get any pieces of shell.

Place a frying pan with vegetable oil on the stove and heat it up. We don’t form the cutlets in advance, otherwise they will spread out. As soon as the oil heats up to the desired level, scoop out the minced meat with a spoon and send it to fry.

If for some reason the cutlets fall apart in the pan, try making them smaller or adding starch or flour (just a little bit).

Cut the chicken fillet into small cubes. Place the fillet in a bowl.

Cut the onion into small cubes, chop the dill and parsley.

Cut the hard cheese into small cubes. You can grate half the cheese, then the cutlets will keep their shape better, since the grated cheese will begin to melt faster.

Place vegetables and cheese in a bowl with chicken.

Add starch to the minced meat for chopped cutlets.

Steamed chicken cutlets with carrots turn out to be an appetizing orange color, but the carrots do not greatly affect the taste. Of course, if you didn't take carrots and chicken in equal parts. A crumb of wheat bread soaked in milk will make the cutlets more fluffy, although also higher in calories. Therefore, if you choose this dish based on its low calorie content, you don’t need to add bread.

Most often I use chicken fillet for minced meat - it’s easier to “work” with. The fillet needs to be washed, and then cut off all excess - films, cartilage. Carrots and onions need to be peeled and washed.

Trim the crusts of the wheat bread, cut the crumb into small squares and place in a bowl. Pour in milk and leave for 10 minutes.

Cut the chicken fillet into small pieces and place in a blender bowl. You can also use a meat grinder with a fine grid.

Beat a fresh egg into a blender bowl, add salt and spices for the chicken. Grind at high speed for a couple of minutes.

For the chicken cutlet recipe I needed:

How to cook chicken cutlets from breast fillet

Let's start by preparing minced chicken for homemade cutlets with carrots. I had chicken breasts on the bone, I removed the fillets from them, so that some of the chicken meat remained on them. From these, I quickly prepared noodles with wild mushrooms (I will share the recipe with you soon).

Cut the chicken fillet into large pieces, pass through a meat grinder along with the onion and a slice of bread soaked in milk.

Add grated carrots, a couple of spoons of sour cream, raw eggs, salt and spices to the minced chicken breast.

Mix the cutlet mince with carrots well and form into cutlets.

I fried part of the chicken breast cutlets in a frying pan (the other side of the cutlets is fried under the lid),

and I steamed the second part for children and healthy eating in a slow cooker,

but that's another story 😉

Children eat cutlets made from minced chicken more readily than cutlets made from pork or beef, because they are lighter and less fatty. Chicken cutlets are prepared with various additives; various vegetables, cheese, oatmeal and other grains are added to them. We will prepare chicken cutlets with carrots, fry them as usual in a frying pan, and in order to make them more juicy and tasty, lightly simmer them in tomato sauce.

Ingredients

  • Minced chicken – 1 kg
  • Carrots – 1 pc. (large)
  • Egg – 2 pcs.
  • Tomato paste, salt, dried dill.

Preparation

We will use ready-made minced chicken. But you can cook it yourself. To do this, you need to wash the carcass, separate the meat from the bones, remove the skin and grind it in a meat grinder. And the skeleton will make a delicious light broth.
So, transfer the minced chicken into a deep bowl, beat in the eggs, and add salt. Grate the raw carrots on a coarse grater, add half to the minced meat, and set aside the rest for the sauce. Instead of carrots, you can add young zucchini to the mixture. And in the fall, pumpkin is perfect. We do not recommend adding frozen vegetables; they will make the mixture too watery.


Mix everything well until smooth. Cover with cling film to prevent it from drying out and let stand for 20-30 minutes, during which time the salt will dissolve. The minced meat is tender, soft and not dense. We will not add bread, semolina or starch to these cutlets. Thanks to the eggs, the cutlets hold their shape well.


Wet your hands in cold water and quickly form cutlets. We recommend wetting your hands before each serving to prevent the minced meat from sticking. Immediately place them in very hot oil. This way they will set immediately and retain their shape. Fry on both sides until golden brown. For frying, we use a mixture of vegetable and butter in a one to one ratio.


We are preparing the dressing. Mix the remaining carrots, 1 tablespoon of tomato paste and add dried dill and salt to taste. Fill with hot water and stir.


Place the cutlets tightly in the dish where they were fried.


Pour in the sauce; it should almost completely cover the product. Let the liquid boil, reduce the heat to low and simmer for 10 minutes with the lid closed.


Soft chicken cutlets are juicy and tasty. Serve with fresh, stewed vegetables or potatoes. This recipe can be used to make cutlets from turkey or duck fillet.
