Yes, I want to meet them with joy, feed them nourishingly and tasty. But at the same time, I have no desire to show off and prove with the language of delicacies that my life is a success.

There is one more condition in the task conditions. Relatives include people of the older generation who are accustomed to traditional dishes and cannot imagine the New Year without Olivier, herring under a fur coat and other Soviet delicacies. Therefore, I specifically select a menu of familiar dishes, without scary names or unexpected ingredients.

Everything is simple here:

1. A shopping list is compiled from the menu and everything is purchased in bulk at the nearest store. All products are available and can be purchased at any convenience store.

Preparation:

  1. Beat eggs, mix with soda, salt and pepper, add flour, pour in beer and mineral water. Knead the dough to a consistency similar to pancake dough.
  2. Cut the fish fillet into small slices, sprinkle with lemon juice, salt and pepper to taste. Let sit for 10 minutes and dry with paper towels.
  3. Dip fillet pieces in batter and immediately fry in well-heated oil or in a deep fryer.
  4. Blot the finished fish from excess oil on paper towels.

Ingredients:

  • wheat bread - 300 g
  • boiled eggs - 2 pcs.
  • salmon caviar - 3 tbsp. l.

Preparation:

  1. Cut the eggs into slices.

  • beef shank - 1 pc.
  • pork leg with claw - 1 pc.
  • chicken wings or legs - 2 pcs.
  • lean beef - 200-300 g
  • onion - 1 pc.
  • carrots - 2-3 pcs.
  • garlic - 3-4 cloves
  • parsley root, any greens, salt
  • raw egg - 1 pc.

Cooking method:

  1. Process the meat first. Scrub the leg and shank well and wash. Rinse the chicken parts. Soak all meat parts in water overnight.
  2. The next day, place all the meat parts in a saucepan with a thick bottom and cover with water. The water above the meat should be 6 cm high. Bring to a boil, skim off the foam.
  3. Add peeled onion, carrots and parsley root to the broth.
  4. Place the pan over very low heat and cook for about 8 hours. Add water as it boils. The water should remain at the same level (6 cm above the meat). At the end of cooking, add salt to taste.
  5. At the end of the eighth hour, remove all meat parts from the broth. Separate the meat from the bones and chop finely. Strain the broth through cheesecloth.

If the broth becomes cloudy, at the end of cooking, break a raw egg into it to collect small particles. And then remove the egg with a slotted spoon.

6. Finely chop the peeled garlic and herbs, mix with the chopped meat.

7. Place meat and garlic in an enamel tray with high sides. Pour in the broth. Cool, then refrigerate until completely set.

Mushroom caps stuffed with caviar

The presence of a dish with mushrooms is mandatory on the New Year's table - because they grow in the forest along with the Christmas tree.

Required for 4 servings:

  • large champignons - 400 g
  • sour cream - 200 g
  • bacon - 50 g
  • garlic - 2 cloves
  • bulb
  • thyme - 5 sprigs
  • ground crackers - 2 tbsp. l.

  • vegetable oil, salt, pepper

Preparation:

  1. Peel the mushrooms, rinse, cut off the stems and set aside. Place the caps in a heatproof tray lined with parchment.
  2. Finely chop the mushroom stems along with the garlic, onion and bacon. Fry in a well-heated frying pan in vegetable oil, stirring, for 5-7 minutes until soft.
  3. Add thyme leaves, sour cream and 1/2 tbsp. l. crackers. Add salt, pepper, stir and keep on fire, stirring, for another 1 minute.
  4. Stuff the champignon caps with the resulting mass and sprinkle with the remaining breadcrumbs. Place in the oven at 200 degrees C for 20 minutes. Turn on the function that coats the products with a golden brown crust.
  5. Remove the mushrooms from the oven and place red caviar on top of the filled caps. Ready.

Olivier salad with crab meat

Ingredients:

  • smoked chicken breast - 300 g
  • radishes - 3 pcs.
  • large orange - 1 pc.

  5. Add salt to taste and season everything with mayonnaise.

  • Duck – 1.5-2 kilograms
  • Honey – 3 teaspoons
  • Butter – 50 grams
  • Ground black pepper
  • Dry red wine – 250 grams
  • Sour apples – 1-2 kilograms
  • Sugar – for baked apples

Preparation:

  1. Rinse the duck and dry it. Sprinkle with salt and pepper.
  2. Prepare the sauce in a saucepan. Pour a glass of wine and mix with honey. Place on low heat and stir. We are waiting for the liquid to become half as much. This will take approximately 10-15 minutes. Add butter, keep on fire for 5 minutes and remove. Add a little salt and pepper.

We will need:

  • cottage cheese - 150 gr
  • processed cheese - 1 piece
  • boiled eggs - 3 pcs
  • butter - 50 g (2.5 tbsp. spoons)
  • mayonnaise - 2 teaspoons
  • walnuts - 1 tbsp. spoon
  • French fries, black bread, dry biscuits and bell pepper - for decoration
  • garlic - 1 pc.
  • dill - for decoration
  • salt - to taste

Preparation:

1. Boil the eggs and cool. Separate the whites from the yolks.

2. Grate the yolks and one third of the processed cheese chilled in the freezer on a fine grater. Grind the nuts using a mixer. Add mayonnaise and mix.

3. Wet your hands in water and form balls from the yolk mixture.

4. Grind the cottage cheese and remaining cheese through a sieve, add chopped garlic and butter. Add salt to taste and stir.

5. Cover the yolks with curd mixture and form a snowman.

1. Remove the butter from the refrigerator in advance so that it becomes soft. Beat it with a mixer into a thick white mass. Add powdered sugar, vanilla, salt, food coloring and beat everything until smooth.

2. Add milk, first 5 tablespoons, beat, and gradually add more to achieve the desired cream consistency. Beat the finished mixture for 5 - 7 minutes.

3. For the muffins, mix flour, sugar, cocoa, soda, salt and vanilla sugar. Sift through a sieve, preferably twice.

4. Pour in vinegar and stir with a fork. Then butter, and mix again with a fork. No need to beat!

5. Pour in water and continue whisking with a fork until smooth. Do not beat!

6. Place the dough in molds and bake for 30 minutes at 180 degrees.

7. Now let's start decorating. Grease the cake with cream and place the berry in the center so that it stands stable.

8. Place the cream in a pastry bag fitted with the smallest star tip.

9. Starting from the bottom, we form spruce branches from the cream. To do this, you need to place the end of the nozzle against the berry and squeeze out the cream about 1 cm. After you stop pressing, remove your hand. And we do the same for the next branch.


We arrange the branches in a checkerboard pattern in relation to the bottom row.

10. Decorate Christmas trees with jelly beans and star-cookies.
