Firstly, charlotte dough can be prepared not only from wheat flour, but also with the addition of corn, oatmeal, buckwheat, and nut flour (half with wheat). Each time the charlotte will turn out with a new taste!

Secondly, in addition to different types of flour, you can add various spices to the dough: cinnamon or vanillin; turmeric, ginger! You can even pour in cocoa, it will be a chocolate charlotte - but the classic version, in my opinion, is better. But if you add a couple of spoons of poppy seeds or chopped nuts to the dough, it turns out very tasty!

Then, you can add not only apples to the pie, but also any seasonal fruits and berries. I tried charlotte with pears and plums; with cherries and apricots, raspberries, strawberries! And each option is delicious in its own way. But let's start with the apple charlotte.

Ingredients for charlotte with apples for a 20-24 cm pan

  • 3 large eggs;
  • 150-180 g of sugar (incomplete 200 gram glass);
  • 130 g flour (1 glass without top);
  • 1 tsp. baking powder (or 1 tsp soda, quench with 9% vinegar in flour);
  • 1/4-1/2 tsp. cinnamon;
  • 2-3 tbsp. l. powdered sugar for decoration;
  • 5-7 medium apples.

Method for preparing charlotte with apples

Charlotte tastes best with sweet and sour fruits of green and yellow varieties: Antonovka, Granny Smith, Simirenko, Golden. Loose apples are not very suitable for this pie: they will “melt” in the dough and the taste will not be the same.

Since the dough for charlotte is biscuit, it must be baked immediately after preparation so that the fluffy mass does not settle. Therefore, it is better to prepare the apples and the mold in advance. We also take the eggs out of the refrigerator in advance: when they are at room temperature, they are beaten into a more fluffy mass.


Wash the apples and remove the cores. If you are in a hurry and the apple peel is not very hard, you don’t have to peel it. But I still advise you to spend a little more time and peel the peel, then the charlotte will turn out much more tender!


Cut the peeled apples into small cubes or slices, as you prefer. To prevent the apples from darkening while preparing the dough, you can sprinkle them with lemon juice.

It is convenient to bake charlotte in a springform pan: then the fluffy, tender pie is easy to take out and transfer to a dish. I cover the bottom of the mold with confectionery parchment, similar to how embroidery canvas is put on a hoop: I cover the bottom of the mold with paper, then put the sides on top and close it, and trim off the excess paper. Then I lightly grease the parchment and the walls of the mold with odorless sunflower oil so that the charlotte does not stick. If there is no parchment, grease the pan with butter and sprinkle with flour or breadcrumbs.


If you don’t have a springform pan, you can bake the charlotte in a solid metal pan or even in a cast iron frying pan, only then it will be a little more difficult to get out. But it’s quite possible to cut the charlotte into a mold and eat it straight from there. If you bake in a silicone pan, remove the charlotte only after it has completely cooled, otherwise part of the dough will remain stuck to the pan.

The mold and apples are prepared, it’s time to turn on the oven to warm up to 180-200 °C.


Let's prepare the dough for charlotte. We begin to beat the eggs with sugar first at the minimum speed of the mixer; after 30-45 seconds we switch to medium and then to maximum. In total, beat for 2-3 minutes until the mass becomes light and very fluffy (two to three times more than the original volume).


Sift the flour mixed with baking powder into the beaten eggs and mix gently from bottom to top, in a circular motion. You can add cinnamon to flour or sprinkle it on apples.

You can pour the apples into the mold and pour the dough over them, or put them directly into the dough and mix gently.

In the first case, you will get a tender apple layer at the bottom of the charlotte, in the second, the fruit will be distributed evenly. There is a third option - pour out half the dough, then pour in the apples and pour the second half of the dough over them.

Does the dough spread out like a thick, wide ribbon? You did everything right!


Place the pan in a preheated oven and bake the charlotte at 180°C for about 25-35 minutes. After about 10 minutes, you can carefully look into the oven. If the charlotte is in no hurry to rise and brown, turn up the heat a little (up to 190-200 °C); if, on the contrary, the top crust is already browned, but the middle is still liquid, reduce the temperature slightly, to 170 ° C.

You can cover the charlotte pan with foil to prevent the top from burning while the center bakes. The exact temperature setting will be different for each oven, so be guided by the type of pie: when the crust turns golden brown and a wooden skewer comes out dry from the dough, the charlotte is ready.


Let the charlotte cool in the oven for 5-10 minutes: if you take it out right away, the change in temperature may cause the sponge cake to settle a little. Then let it sit in the pan for another 10 minutes: it is easier to remove the parchment from a cooled cake than from a warm one.


Having opened the mold, move the charlotte onto a plate. I invert it onto the pan lid, remove the parchment, cover the pie with a dish and invert it again.


Sprinkle the charlotte with powdered sugar through a small strainer - it will become more elegant and tastier. Then cut into portions with a sharp knife.

Preparation:

  1. Peel the apples and cut into 8 pieces.

2. Prepare a frying pan in advance. Cover the bottom of the pan with parchment paper.

3. Place all ingredients in a bowl. Sift 500 grams of flour and 1 packet of baking powder and add.

4. Add 250 grams of sugar, 1 packet of vanilla sugar (it can be replaced with lemon zest).

5. Add 250 grams of butter at room temperature, a pinch of salt, 5 eggs, 2 tbsp. spoons of milk and whisk everything together. I'll beat it in a dough mixer.

6. Add apples to the finished dough and mix well, no need to stir for long. You can add cinnamon if you wish.

7. Place the finished dough into a frying pan lined with baking paper.

8. This charlotte is baked at a temperature of 170-180 degrees, 40 - 60 minutes. Check readiness with a toothpick. As soon as it browns, our charlotte is ready.

There is very little flour here, and the dough rises due to well-beaten eggs. This means that all mixing of the beaten egg mass must be done with upward movements and very carefully. Butter is required to grease the pan. You can replace it with a vegetable one. You need high-fat sour cream of the highest quality. You can take any apples.

600 g apples,
6 eggs
½ cup sugar
1 glass of sour cream,
½ cup flour
cinnamon,
butter,
crackers for sprinkling.

Preparation:
Grind 6 yolks with sugar until white, add 7 tablespoons of sour cream. Grate 3 apples, add flour and mix everything together. Add the remaining chopped apples and cinnamon.   • 370 g flour
  • 200 g butter

Charlotte with cherry

What do you need:

  • 250 g butter
  • 200 g sugar
  • 5 eggs
  • 1 tbsp. flour (140 g)
  • 1 teaspoon of baking powder (you can quench 0.5 teaspoon of baking soda with vinegar)
  • 120 g starch (if you have corn starch, use it, the taste will be subtler)
  • 300–400 g cherries (you can use frozen ones, but they must be thawed first)

How to cook:

1. Preheat the oven to 200°C.

2. Beat the softened butter with a mixer, adding sugar in small portions. Add eggs one at a time, beating thoroughly after each.

3. Combine the sifted flour with baking powder and starch and also add it into the dough in small portions, constantly whisking.

4. Line a springform pan with parchment (we used a pan with a diameter of 22 cm) and grease with a small amount of butter.

5. Pour the dough into the mold, place a cherry on top, carefully press each cherry into the dough.

6. Bake the charlotte with cherries for 30–40 minutes.

Charlotte with apples and plums

What do you need:

  • 3 apples (we had green strong apples)
  • 1 lemon
  • 4 eggs
  • 5 plums (or 1 orange)
  • 130 g flour
  • 100 ml cream 20% fat at room temperature
  • 60 g sugar
  • 1 pinch of salt
  • vanilla sugar - for sprinkling apples
  • powdered sugar, cinnamon - for decoration

How to cook:

1. Preheat the oven to 190°C.

2. Peel and seed the apples and cut into medium-sized cubes. Sprinkle with lemon juice, sprinkle with vanilla sugar and zest. Add the plum halves (if you use an orange instead of plums, separate the citrus into slices and cut each slice in half).

3. Add eggs to the sifted flour and mix with a whisk. Gradually pour in the cream, add sugar, salt and beat thoroughly with a mixer. Gently stir in apples and plums (or orange).

4. Place the dough in a springform pan lined with parchment and bake for 35–40 minutes.

5. Remove the charlotte from the oven, cool and sprinkle with powdered sugar and the sides with cinnamon.

Charlotte with white chocolate and berries

What do you need:

  • 100 g butter
  • 120 ml milk
  • 200 g sour cream
  • 2 eggs
  • zest of one small lemon
  • 1 teaspoon vanilla
  • 280 g flour
  • 1 teaspoon baking powder
  • 100 g sugar
  • 200 g white chocolate
  • 150–200 g of any berries (frozen can be used)

How to cook:

1. Preheat the oven to 180°C.

2. Melt the butter, cool slightly and mix with milk, sour cream, eggs, lemon zest and vanilla.

3. In another bowl, thoroughly mix the sifted flour with baking powder, then add sugar and mix again. Combine with products from 2 points. At this stage, do not use a mixer and do not get carried away with mixing, there are no lumps - the dough is ready!

4. Chop the chocolate into small pieces and add to the dough. Then add berries. Mix very carefully from bottom to top.

5. Line the springform pan with parchment and fill with dough. Bake for approximately 50 minutes.

Charlotte with apples, cinnamon and cardamom

What do you need:

  • 300 g flour
  • 2 teaspoons baking powder
  • 1/3 teaspoon baking soda
  • 1 heaped teaspoon of cinnamon
  • 1 teaspoon cardamom
  • 0.5 teaspoon salt
  • 180 g butter
  • 150 g sugar
  • 1 teaspoon vanilla sugar
  • 2 eggs
  • 120 ml milk
  • 2 large apples (we used Granny Smith)
  • 5 tbsp. spoons of brown sugar
  • juice of half a lemon
  • butter - for greasing the pan

How to cook:

1. Heat the oven to 190°C.

2. Mix the sifted flour with baking powder and soda, add spices and salt.

3. Beat softened butter with regular sugar and vanilla. Add the eggs one at a time, without stopping the mixer.

4. Mix flour with whipped butter. Pour in the milk and mix thoroughly again. At this stage, it is better not to use a mixer and mix the dough with a wooden spatula.

5. Peel the apples, carefully cut out the core and cut into thin discs.

6. Line a springform pan (we had a pan with a diameter of 24 cm) with parchment, grease the surface of the paper with butter and evenly sprinkle the bottom and sides with 1.5 tbsp. spoons of brown sugar. Sprinkle with lemon juice and sprinkle again with 1.5 tbsp. spoons of brown sugar.

7. Pour half of the dough into the mold and carefully place half of the apples. Fill with the second part of the dough. Place the remaining apples on top.
